there’s nothing like the post-holiday feeling of wanting to only eat salad for the rest of your life. it’s a masterclass in limitless carb indulgence, with an advent calendar that never ends. it’s a lot—but here’s the good news: today’s recipe will keep feeding your carb load because the holidays don’t actually end until January 20th at 9:00 Pacific time.
today we’re making GARLIC BURRATA CAVATAPPI. think tender, swirly pasta coated in a luscious, garlicky sauce made with crème fraîche, Pecorino Romano, and a hit of lemon. the peak? a velvety ball of burrata that melts into the pasta like it’s auditioning for a rom-com. this recipe is perfect for when you’re craving something easy and comforting just for yourself, or when you need to impress a guest without turning your kitchen into a war zone. plus, it’s versatile enough to be a main dish, a side, or a late-night snack that feels way fancier than it should.

PASTA
place pasta (1 cup) and water (1 ½ cups) in a microwave-safe bowl. ensure the bowl is large enough to prevent overflow. microwave on high for 7-9 minutes, stirring halfway through, until the pasta is al dente and most of the water is absorbed. adjust time based on pasta type.
SAUCE
add TOOM Original Garlic Dip (2 Tbsp), Pecorino Romano (¼ cup), crème fraîche (¼ cup), lemon zest (1 lemon), lemon juice (½ lemon), and black pepper (½ tsp). stir thoroughly to combine. microwave for an additional 1-2 minutes until the sauce is smooth and coats the pasta evenly.
CHEESE
gently place the burrata (1 small) on top of the hot pasta. let it soften for a minute before breaking it open to release its creamy interior.
SERVE
garnish with torn basil leaves (¼ cup) and, if desired, toasted breadcrumbs or crushed pistachios.
